Salmon
Spinach
2 tbsp Honey
1/2 cup Balsamic Vinegar
1/2 tbsp flour
2 Fresh Basil Leaves
Before cooking salmon or spinach, make the balsamic honey glaze. Put 1/2 cup balsamic vinegar in a sauce pan with 2 tbsp honey. Bring to a boil, add basil and pepper. Add flour and bring it down to medium heat, letting it thicken. When the mixture coats your spoon like a glaze, set aside and put in sauce bowl. To cook salmon, put 1 tbsp olive oil in pan with lemon, balsamic vinegar, soy sauce, white wine vinegar, salt and pepper. Let sauté until it is cooked to your liking. Then steam spinach until done. Put salmon on plate, surrounding it with the spinach. Pour some of the balsamic glaze on top.
We saute’d asparagus with soy sauce and baked sweet potatoes to go with the salmon and spinach.
