Found this in a magazine, haven't made it yet. Let me know if it's any good?
I found this in a magazine...
1/4 cup chopped garlic
1/2 cup rice or white wine vinegar
1/4 cup water
1/4 cup extra virgin olive oil
1/4 cup grape seed or corn oil
2 tbsp dried oregano
2 tbsp dried rosemary
1 lemon, sliced
1 tsp red pepper flakes
1 tsp. coarse ground black pepper
2 tbsp salt
1 tbsp sugar
2 small chickens, quartered.
1. Combine all the ingredients in a bowl and pour the mixture over the chicken and marinate overnight. Cover with plastic wrap.
2. The next day, remove the chicken from the marinade (but don’t wipe tall the herbs off the skin) and season with salt and pepper.
3. You can cook the chicken on a grill, or, if you’re using an oven, place the chicken on a roasting rack on a rimmed baking sheet and broil for 5 minutes on the highest setting to crisp the skin. Place chicken on the middle rack and make at 350 degrees for 20 minutes. Serve.
